Three@Sea Fish Curry

I have received a number of requests for the fish curry recipe that I mentioned in the Happy Birthday blog. I am happy to share this recipe, but please understand it is fairly simple given “ship’s stores”.  The good news is it is also very flexible given availability of ingredients, and my crew thoroughly enjoys it every time. 🙂 I was inspired to create this recipe after enjoying a delicious meal of fish mole cooked by our friend Rosemary on Levity (another 43ft. Nordhavn we met in the Bahamas this winter).

The nice thing about this recipe is it’s easy to keep the base ingredients in ship’s stores (coconut milk, rice, spices) and then I adjust it based on what I have aboard that’s fresh.  Also, I’ve used a variety of fish from wahoo, to mahi mahi to Great Lakes Whitefish, and they are all equally delicious. Hope you enjoy it!

Three@Sea Fish Curry

2-3 Tbsps of butter
1/2 large onion or one small onion, chopped
2 cloves of garlic, minced
1 Tbsp fresh ginger, minced (or 1 tsp ground ginger)
1/2 jalepeno pepper, minced (or 1/2 tsp red chili pepper flakes)
1 15oz can coconut milk
1 Tbsp curry powder
1/2  lime, juiced
salt to taste

1- 2 Tbsp fresh basil or fresh cilantro, chopped (whatever I have aboard)
~1 lb of white fish, cut into ~1 inch cubes/pieces (preferably fresh, locally caught)

Coconut Rice (Basmati or Jasmine rice made with sauteed leeks (or onions) and 1 can coconut milk as part of liquid requirement)

Saute onion in melted butter for about 10 minutes until translucent.  Add garlic, fresh ginger and jalepeno and saute for an additional 2-3 minutes to release their flavors.  Add coconut milk, curry powder, lime, salt (and ground ginger if not using fresh) and simmer for 30 minutes to blend flavors.  Add fish and simmer for additional 10 to 15 minutes until fish is cooked through.  Add basil (or cilantro); adjust seasoning, and serve immediately over coconut rice (a bowl works best).
